Potted Beef. Take 4 lbs of tender lean beef, lay with as much salt petre as will strike it for a few days, cut it in slices with a little mace, cinnamon, & cloves, stew them all together 5, or 6 hours with a little butter & well covered up, then chop it all together with a nutmeg & cayenne, when cold put it in pots, cover it with clarified butter. - (Mrs. C.) Scotch Woodcock Take three or four lbs of white bread toast, & butter it on both sides then take 3 anchovies, wash & scrape
