Mince meat 1 lb currants, 1 lb raisins, 1/2 lb suet, 2 lemons, 1 1/2 lb apples, 1 lb sugar, Allspice, Brandy Christmas cake 2 lbs Flour, 6 oz lard, 4 oz Butter, 1/2 lb Sugar 1 1/2 Currants, 3/4 lb Raisins, 4 oz Candied lemon 1 oz Almonds, 2 oz ground rice, 4 Eggs, Baking P Lemon Cheesecake Mixture Dissolve one pound of loaf sugar in the strained juice of three lemons & three tablespoons full of brandy, Stir in half a pound fresh Butter till dissolved but not oiled, the add the grated rind of the lemons, the yolks of 8 Eggs and whites of four well beaten, stir rapidly over a gently fire, till the mixture is of the consistancy of honey, put it into a jar & when cold tie it over with thick writing paper & keep in a cool place -
