Muffins Beat 3 eggs very light separately, then add 2 cups milk & 2 tablespoons melted butter, Stir in Slowly 1 quart flour 2 tea spoonful of salt & a little yeast, when well risen, stir well & drop from a large spoon into the baking pan - Cheese Custard Grate some dry cheese - to 2 or 3 ozs one egg beaten & half a pint of milk season with pepper & salt, mix well & bake 20 or 30 minutes Potatoes & Cheese To 6 or 7 potatoes mashed add 2 tablespoons of butter, a little salt & pepper and enough hot milk to make them quite soft. grate 1/2 cup ful of cheese & beat into the potatoe grate a thin layer of cheese over the top & bake
