Damson Cheese New fruit is always Best But with the fruit - a portion of the pulp to be used 1=lb of [D?] to two of Juice crack the stones & put in the kernels - with 2 1/2 lbs of S[illegible] B[illegible] as for Jelly- not to stiff- pour in the moulds- preferably oiled 2 - table spoonfulls of good rum is an [addition?] [text exposed on previous leaf by torn away page]: of 1 Lemon Beat this up when nearley cold add the Whites of 2 Eggs well beaten up & the Juice of the Lemon or accord[ing] to taste Wisk till nearley cold Wet the mould & let it be
