Aged 41 Years In memory of Henry Locke, who departed this life Decr. 22nd 1896, aged 75 years. Sugar. if no lemon juice be at hand a few drops of Vinegar Honey or butter. any acid or grease will smooth the sugar which is naturally disposed to grain As the sugar has no longer any Moisture it requires a Strong fire but this must be applied to the body of the sugar only for if the fire be to feirce it will boil the Sugar to the Sides of the pan. &c To Clarify Sugar Break the sugar you want into a copper pan wich will hold a third more than the required quantity & put a half pint of Water to every pound of Sugar
