On Correcting the bad taste of Butter Previous to the Cows having Turnips given to them save the buttermilk, & when it is in acid state, or not less than a week old, put about a pint of it into a well scalded cream-pot, whilst it is quite hot, and stir it well, then add your evening & morning cream as usual; it not only prevents the taste of turnips but every other unpleasant flavour which winter butter very often has. New buttermilk will not answer, consequently it must be saved from one churning to another: the exact proportion is not material; say about a pint to four or five pounds of butter. To prevent Beer from becoming [Acetius?] suspend a know of Maple by a piece of Tape from the Bung [illegible - cut off] which being pure car- [illegible - cut off]
