Monday September 30th. Recipes for 100 men. Potatoe and leek soup. 25 qts. 10 lbs. potatoes. 6 ozs. marg. 3 lbs. onions. 1 lb. corn flour 1 qt. milk. 4 ozs. salt. 3 lunekes leeks?? Method. Peel, wash all veg. Finely shed onions, but leeks in small dice. Place in from?? with marg and salt. Lored??? and allow to slowly simmer until limp. but potatoes in Paysarre style. Add to soup. Add water and allow to simmer until cooked. Mix cornflour and milk, slowly add to soup whilst stirring. Simmer for furthered 5 mins. Correct seasoning and serve. Onion Soup. 2/10/40 25 qts brown stock 6 lbs onions 1" dripping 11/2" flour. 12 ozs. cheese. 25 slices of toast 4 ozs salt. Method. Peel and finely shed onions. Place in pan with dripping, Fry on till brown. Drain off fat. Add flour, stock, salt and allow to simmer for [illegible]. Put toast in four. Place in serving [illegible]. Pour on soup. Sprinkle with grated cheese. Place in oven till brown.
