To make Calves Foot Jelly (Mrs [Pascoe?] [Lapriggon?]) Boil two pair of Calves feet in six quarts of water, till it is reduced to three; let it stand till quite cold; skim off the fat and take the jelly up clean; take eight eggs well beat, three quarters of a pound of loaf sugar or more if necessary, four large lemons or six small ones, with a pint and a half of Mountain Wine; mix the Wine Lemons Sugar and Eggs together, and put them with the Jelly cold into the saucepan keep it stirring till it boils; then fine through a flannel [illegible] some of the Lemon peel pared then put with it care must be taken to put all the ingredients cold together or it will not [fine?] well. To make Mackroons To one pound of blanched and beaten sweet almonds, put one pound of Sugar and a little rose water, to keep them from [oiling?], then beat the whites of several eggs to a froth put them in and heat [turn?] well together, drop them on wafer paper, grate sugar over [illegible] and bake them.
