Plum cakes half a pound of flour dried, half a pound of currants when washed & dried. three ounces of sugar pounded, two yokes, & one white of egg, one spoonful of cream, one of water, (orange flower or rose water is better) or a little mace, and nutmeg. Mix it with a spoon, and drop the cakes on tins - bake them in a [illegible] oven. You must cut four ounces of butter into the flour. A Souffle Two spoonsful of arrow root mixed with a pint of new milk, a quarter a pint of cream, one oz. of butter, and a little lemon peel.
