3) Cherrys with your [hands?], & breake the Stones in a morter & put to them to this quantity 8 or 10 pound of Sugar, put it into a Vessell with a Closs cover, fill it 3 parts full, let it stand till it is fine & draw it into either a Vessell or bottles as you please, if in a vessell you must be sure to fill it. To make [Rosolis?] Take 2 Drams of Ambargreese, and one dram of musk, beat it in a morter with fine Sugar and put it in a great glasse bottle with 3 quarts of good nantis brandy, Stop the bottle very Closs, and let it stand for a week Stiping upon hot sand over a Gentle fire, after this time take your Brandy out of the bottles and put it into a Earthen pipking, with Cloves ginger & long pepper a little [anis?] Seeds the juice of half a dozen of Lemmons, Let all this stand 24 hours, and pass all this in a Cleare sift, then take 4 pounds of double reffne Sugar well beaten and melted and put your brandy in and run it throw a bag with some white of eggs beaten after. To make Usque bath Take 12 quarts of Strong aquea vitae in wch for four dayes infuse a pound of Liquoriss, Raisons of the Sun half a pound Cloves half an ounce mace ginger of each 2 dragms Strain it & keep it for your use To make Lemmon brandy. Take a quart of Brandy, put ye peels of 7 or 8 Lemmons pared very thin into the brandy, Steep it a night and a day, then take Half a pound of Refined Sugar and put to it half a pint of Spring water, then boyle and Scum it clean till it is a thin Syrup, then put it boyling hot to ye brandy and pills then run it through a gelly bagg 2 or 3 times, then bottle it up. Let it stand till it is cold
