87 [title?] take a pound of fine flower, a pound of whit Suger, and drie them very well in the oven, and when it tis very drie bett the Suger to pouder and sift itt throu a [illegible] sife, then mingell ye Suger and flower to gather, and then [illegible] itt in 2 partts then take A pound of [illegible] butter and wash itt with 5 or 6 sponnfulls of [illegible] flower watter. till all the whitt water is come from itt, then take a drie gin pot and shake a little in att a time tell itt tis all in and keepe itt working all the while with your hand then take ye yolks of 4 egs and the whitts of 2 and 5 or 6 sponnfulls of oring flower watter, and still keep itt working tell itt tis all mixt together, bett some nutmeg and water very small, and put in then take one pound of Curans [illegible] washed and dried very well by the fier tell they be hott, then put them in, lett your pans that you bake them in be buttered , and when thay be in the pans that you [illegible] put in, then in the oven [illegible] Some Suger upon them and bake them very well
