Taylor Swanson is baking just before it is ready to come out of the oven, with the whites of the eggs to a stiff froth then add 3 tablespoons sugar- put this on the top if the pie when baked and return it to the oven until set. -Clara Gibbs Orange Pies. grate the peel of 10 oranges- squeeze the juice of 2. -rub together 1 lb sugar & 6 oz butter- add 4 grounded crackers then 10 eggs and when ready to put into the crust stir the juice well in. - also - Mrs. W. Nye 6 oranges, 6 lemons, 15 eggs- 9 cups sugar, handful Indian meal, piece of butter as big as an egg -this quantity makes 12 pies- beat the butter and sugar together.
