pour a cupful of water over & stew very gently two hours giving a stir now & then Soup Maigre 6 large potatoes. 2 onions or 3 leeks. 2 oz butter. 2 quarts water. 1 pint milk. 3 table spoonfuls sago or tapioca. Put the water to boil then add the butter & vegetables. boil about an hour then put the soup through a culander. Put it into the saucepan with the milk pepper & salt. When boiling again add three tablespoonfuls sago. Drip it through the hand & stir well. When the sago is clear it is ready.
