They must not come above the top or the trifle will break. Fill in the mold with the custard and put it in a basin of water to set. Turn it out and ornament the top with dried fruit. Ordinary trifle Line the bottom of a crystal dish with the sponge cakes. Make a custard with the yokes of 3 eggs and white of one and a desert spoonful white sugar. Pour it over the sponge cakes. Whisk half a pint of cream with a glass of sherry very stiff. As the froth rises put it [once?] sieve. If it is running through it must be whisked again. When all is whisked pile it over the custard
