Watermelon Pickle - Sally Woolson Thinly cut rind from water-melon. Remove soft part of pink meat Cut in pieces Soak 12 hours in brine. 1 cup salt to 4 cups water Drain cook in boiling water 15-20 min. Weigh. For every lb of rind use 1-3" stick of cinnamon 8 cloves 2 c. sugar 1 c. water 1 c. vinegar Tie spices in cloth bags Cook ingredients 15-20 mins. Add rind. Bring slowly to a boil Boil till syrup is reduced and rind tender. Put rind in sterilized jars. Cover with syrup. Seal.
