Raspberry Square Cake 1 cup flour 1 tsp baking powder 1/2 cup butter 1 egg 1 tbs milk Topping 4 tbs. butter 1 egg 1 cup sugar 1 can 4 oz. shredded coconut 1 tsp vanilla 1/2 cup raspberry jam Start - oven at 350 - spread an 8" square pan, Sift flour and baking powder. Cut in butter it looks { }. Beat egg slightly stir in milk and add to flour mixture. Mix well spread dough over bottom of pan. Cover with a layer of jam. Mix topping - melt butter. Beat egg until frothy, beat in sugar and melted butter, coconut and vanilla. Mix spread gently over first layer. Bake 30 minutes cool in pan - cut into 16 squares.
