Spring Rhubarb Pudding 8 slices toasted bread, crusts trimmed off 1 1/2 cup milk, scalded 1/4 cup butter 5 eggs, lightly beaten 1 cup honey or 1 1/2 cups natural sugar 1/2 teaspoon cinnamon 1/4 teaspoon salt 2 cups diced rhubarb 3/4 cup wheat germ Half and half cream 1. Cut the toast into one-half-inch cubes and place in buttered casserole. 2. Combine the milk and butter and stir to melt the butter. Pour over the toast cubes and let stand 15 minutes. 3. Preheat oven to 325 degrees. 4. Mix together the eggs, honey or sugar, cinnamon, salt and rhubarb. Stir into the bread mixture. 5. Sprinkle with the wheat germ and bake 45 minutes. Serve warm with cream. Yield: Eight to 10 servings. 3 cups rolled wheat or wheat flakes (available in health food stores) 2 cups raisins 1 cup natural sugar, optional. Mix all ingredients and store in jars in the refrigerator. Substitutions of other dried fruits or nuts can be made. Also any flaked grain, such as bran or rye. Familia is eaten raw with milk and honey. Yield: 12 to 16 servings. 146
