Mince Meat: (Mrs Lavindale's.) 1 lb beef, 1/2 lb suet, twice the measure of the above in chopped apples, 1 lb raisins, 1 lb currants; 1/2 lb citron. 2 teaspoons each cinnamon & alspice, 1 teaspoon cloves, 1/2 teaspoon nutmeg, salt & pepper. 3 cups light brown sugar, put wine, beef stock or water; cook the beef until very tender, let cool in the stock, then remove & chop fine, mix dry ingredients, then add stock & wine, mix well. Layer Cake. (Mrs. Lavindale.) 1 cup sugar, table spoon butter, 2 eggs, 2/3 cup sweet milk, 1 1/2 heaping teaspoon's baking powder sifted in a cup & a half of lour, season to taste. Warm the bowl with hot water, put in butter & sugar & cream well, add eggs one at a time, beat well after each, add milk & flour alternately, if necessary add a little more flour. Doughnuts. Anna Travis 1 qt flour 3 (raised slightly) tea spoons baking-powder, pinch salt, 3/4 cup sugar, 2 eggs, 3 kitchen spoons melted lard, 1 large cup milk, nutmeg (1/2 tea spoon full)
