6 Liver. Etta. Put the liver in a spider and cover with water; let boil an hour or two; let the water boil away just before serving and brown the meat with a little butter. Pate de Veale. Miss Dana. 3 1/2 pounds of the leg of veal & a slice of salt-pork chopped fine. 1 tablespoonful salt, same of pepper [same?] of nutmeg. 4 small crackers pounded [fine?] piece of butter size of an egg & 2 eggs.Mix well & form into a loaf, cover with cracker crumbs & butter & bake 2 hours basting constantly. Mrs. Hughes rule for pickling beef & tongue. 2 lbs dark brown common sugar 2 qts good molasses - must not use sorghum 2 lbs moderately coarse salt 3 lbs coarse salt 3 ounces salt Petre 2 gallons of water - boil 20 minutes - skim well - pour over the meat when cold.
