Mrs. Ripley's Yeast. 3 pints boiling water poured on 4 grated potato 1/2 cup sugar 1 tablespoon salt 1 ditto ginger- stir well- when cool add yeast to raise it or 1 yeast cake- then stand in a cold place. Potato Yeast 1 quart water 3 good sized potatoes 2 teaspoons salt- stir in flour while it is boiling hot, to make a stiff batter- when it is cool, put in your rising, For 2 good sized loaves of bread take 1/2 pint of yeast Yeast Cakes Mrs. W. Clark. 1 handful hops 2 quarts water boil 15 or 20 minutes- Make wheat flour ready in a pan- strain the hop tea, while boiling hot upon the flour- stand till it is as cool as new milk - (stir the tea through the flour till it is well mixed and makes quite a stiff batter) then add 1/2 pint of good yeast - let it stand in a warm place till it rises, which will be in 4 or 5 hours- but let it stand till it does rise- when very light stir in some corn meal & let it rise up again- then add meal to make it as thick as you wish the cakes- & when well risen- make out the cakes & spread them out to dry. Best dried in the sun. It need not stand
