Recipe for Yeast Cakes Take 1 handful of hops. Put in to 2 qts water. Let them boil 15 or 20 minutes. Have some wheat flour ready in pan. Strain the hop tea while boiling hot on to the flour & stir till it is well mixed. The flour should be all wet with the hop tea. It should be quite a stiff batter. Then leave till it is about as cold as new milk. Have ready about 1/2 [pt?] good yeast. Put into the batter. Let it stand in a warm place till it rises which will usually be in 5 or 6 hours. If it should not rise in that time, let it stand till it does when it is very light. Stir in some corn meal. Let it rise up again. Then put in corn meal sufficient to make it as thick as you wish to make the cakes. Then let it rise up again & when well risen make out the cakes & spread them to dry. It need not stand near the stove after you begin to put in the corn meal. If saleratus is used put it in when you make bread but none of the yeast. I should much prefer drying the cakes in the open air if possible when it is not so cold as to freeze.
