Pickles Spiced Gooseberries. Mrs. Matson. 8 pounds gooseberries, 4 lbs. sugar 1 pint vinegar 1 ounce ground cinnamon 1 ditto cloves. Boil sugar vinegar & gooseberries slowly 4 hours--stirring frequently. Put in spices, just before taking off. Tomato Catsup. No.1. 1 gallon skinned tomatoes 3 tablespoons salt 3 ditto black pepper 1 ditto allspice 1 ditto cloves. 1 pint sharp vinegar. Boil 5 hours, strain through a cullender, & bottle tight. Pickles. Mrs. Matson. For pickling Pears, Plums, or Peaches-- 4 pounds sugar to 1 quart vinegar add 2 teaspoons allspice, ditto cinnamon, ditto cloves tied in a cotton bag. This is sufficient for 4 lbs. fruit. To nice ripe tomatoes--peeled. 1 pound sugar 1 gallon vinegar pour on hot.
