157 Tomato Catsup No. 2. 1 gallon Tomato 4 tablespoons salt 2 ditto allspice 3 ditto mustard 4 ditto Black pepper 3 pods red pepper & a few cloves. Tomato Pickles. Premium Maine Fair. No. 1. 1 peck green tomatoes & pack them in salt 12 hours. Then wash, & rinse in cold water - 2 gallons of vinegar, & add 1 ounce cloves 1 ditto mace 1 ditto allspice 1 ditto cinnamon, all unground 1 pound brown sugar, pinch red pepper - steep (not boil) the whole from 2 to 3 hours - the longer the softer the pickles will be. Tomatoes Pickled. Mrs. Johnston. No. 2. 1 peck Tomatoes sliced thin sprinkled over with salt for 24 hours 1 dozen onions sliced thin 1 ounce cloves 1 ditto cinnamon 1 ditto allspice 1 ditto ginger 1/4 pound mustard 1/4 ditto mustard seed 1 pound sugar - vinegar to cover Sweet Pickled Tomatoes.
