To make Elder Blossom wine To one gallon of water add 4 lbs. of white sugar. Boil & skim the mixture 3 or 4 minutes. Then pour hot over a quart of the blossoms, picked from the stems. When cool add the juice of one lemon and a tablespoonful of yeast to each gallon. Put in a stone vessel, and let it ferment Three days. Cover the vessel with a blanket. Then strain and add the white of one egg, well beaten to the gallon, bottle and cork after fermentation has ceased. Ralston receipt --
