To make cheese cakes Take a pint of new milk 5 eggs leave out 3 whites beat them & put them into the milk set it on the fire when the curd is come drain it of very dry then take a 1/4 pd of butter [illegible] of sugar 1/2 a pd of almonds mix to the curd.
