To bake a Cod put a good stuffing in the belly, turn the tail into the mouth & fasten with a screw & string beat 3 eggs with nutmeg pepper & salt & rub the fish all over with it fix it in the dish then cover it with crumbs of bread and lay small bits of butter all over it bake it in an hour in a quick oven make a good fish sauce & take some of the gravy from the fish.
