Currant Jelly To a pint of juice, add a pd of sugar, [scum?] it faithfully, & let it boil smartly after the sugar is dissolved, 15 or 20 minutes. Then strain it through flannel into your glasses, which you must sett where the sun will shine hot upon them for a few weeks - after that cozy paper over them close. - Blanc Monge One ounc of moss to two quarts of new milk, put moss in milk, when cold, add a little rose water, essence of lemon, two or three pieces of loaf sugar, a few pieces of stick cinnamon, boil it half an hour, then run it through a coarse sieve into your moulds, wet as for flummery rose water is preferable to wet moulds with. - [Lynan? ]cloth is good to strain it through Apple Jelly Cut 13 apples in small bits, put in two quarts of cold water, boil them in this with thee peel of a lemon, till nearly half the liquor is wasted, drain it through a sieve.
