White Almond Cakes. Mrs Wells Three cups of sugar two cups of butter stir it to a light cream one tea cup of sweet milk five do of flour - the whites of twelve eggs - one teaspoon of soda - two cream of tartar and one teaspoon full of extract of almonds. Cocoanuts snaps - Beat a Cocoanut in pieces, and lay it in cold water - Grate the white meats on a coarse grater put to it the whites of four eggs with half a pound of white powdered sugar beat it until very light and white then add cocoanut until it is thick enough to stir easily with a spoon add essence of lemon. - Blanc Mange - One ounce of Isinglass dissolved in a quart of milk - one table spoonful of loaf sugar - lemon or any flavoring you prefer - stir gradually till it boils - then strain through a bag into moulds. - Malborough pudding Stew twelve good sized apples rub them through a sieve while warm, stir in 3/4 lb of sweet butter until melted - a pd of sugar the rind & juice of three lemons, q eggs Bake in Coffee same with nice pastry around. - Dressing for salad Large spoonful of mustard, four spoonful of oil, yolks of two eggs - beat the oil with mustard putting in a little oil at a time salt - one quart of milk, yolk of 4 eggs - half cup of sugar, the heaping spoonful of marina - season with lemon or Vanilla - When cool beat three Whites of the eggs to a froth (stiff) add a cup full of sugar Spread it over the pudding, - brown in the oven -
