83 Pickles. Ripe Cucumber Sweet Pickles I have a good many recipes for sweet ripe cucumber pickles. Peel one peck ripe cucumbers, cut in four pieces and soak over night in salt water. In the morning drain off the salt water and boil in about one quart vinegar, 3 lbs. sugar, 1/4 lb. cinnamon bark. It is not generally known that the only spice needed for ripe cucumbers is cinnamon. This is an excellent recipe. I have tried them all the different ways and found this best. R.M. Pickled New Beets. Boil beets till tender and skin comes off easily. Remove skins and pack in clean jars. heat: 2 qt. vinegar, 3 c. sugar} Pour over beets and seal. Aunt Alice's rule = 2 c. vinegar to 1 c. sugar Beet Relish 1 qt. chopped boiled beets. 1 qt. raw chopped cabbage. 1 c. grated horse-radish 1/2 c. granulated sugar. 1 tbs. salt 1/2 teas. black pepper. 1 pinch cayenne. cover with vinegar & seal.
