Buckwheat Cakes. Make a batter of Buckwheat Meal, with cold water, a little salt, a large spoon of yeast, let them rise and bake them on a griddle, it turns sour very quickly if left stand any time after it is risen. Shore cakes. Take a little Butter, and mix it in the flour, 6 eggs, a pint of Cream, a tea=spoon of [Saleratus?], mixx all together roll it out, and cit in cakes. Jumbles. Take 1 lb of flour, 1 of Butter, 1 of Sugar beat them together, then add 4 eggs 1/2 glass of Rose-water a little nutmeg, and cinnamon, 16 drops of essence of Lemon. Snow Balls. Rub a little Butter in the flour, 5 eggs, 1 qt of Milk, a little salt, make it up rather stiff roll them out and bake them in lard.
