Sweet Potato Croquettes 2 cups riced sweet potatoes 4 tbsp. butter 1/2 tsp. salt few gr. pepper 1 beaten egg Cool and mash potatoes -- add all ingredients and chill. form into croquettes. roll in egg and cracker crumbs and fry in deep fat.
