How to Candy Lemons & Oringes Take of y:e best of other Lemon or Oringes or other pare ym or grate So Cut them in half take out the meale So Cast y:m in to water the Next day boyle y:m till thayle fale of a bodkin then take there weight in Shuger Clarifi it and put them in and Lett them Stand all Night the Next day boyle the Surup and put them it againe y:e may take oute the Surup once or twise more boyling it every time and put them in them Lay them out to Dry then take there weight in Suger well Clarified put to it youre Lemons and oringes boyle up ye Suger till it fly Rub you Suger aletell on the pan side then take them oute one by one and Lay them opon a fire and Sett them to dry How to Preserve Peaches Take [illegible] of Loaf Sugas Clarifie it & make a Light Sirrup of it then put half in an Earthen pan & the other in your brass pan put it on the fire & Scum it well & when it begins to boile put the Peaches in one after another and turn em with a Spoon so that they Equaly boyl all over press them a Little to know when they are Softish & when those you find so take y:m out & put them into the Earthen pan wheare you
