Lemon Creams Take six Lemons pare them very thin & steep the pareings in a quart of fair Water that it may be very strong of the Peel then squeeze in the juice of your Lemons & add to it three Spoonfulls of Orange Flower Water & the whites of eight eggs, the yolks of two, beaten very well, Strain it through a hair Sieve, sweeten it to your Palate with the fine loaf Sugar set it on the fire & keep it stirring all one way 'till it be as thick as cream, then put in your Glasses. Mrs. Phillot Quince in Quarters Take Quinces Coddle pare & quarter them & to every pound of quince a pound of double refined Sugar Clarify'd & boyld to a candy height give them two Cover boilings, being clean shim'd each time, then put in a pint of clarify'd Sugar & a pint of the decoction of the best Pippens & give them another cover'd boiling. Skim them clean & when almost cold put them into your Glasses or Potts Mrs. Phillot Quince Marmelade To every pound of (illegible) Pulp of Quinces, one pound of double refin'd Sugar Boyld to a candy height, then put in your Pulp & give it seven or eight good boilings Mrs. Phillot
