an egge, beat it till it be very stif then drop it on white paper To make Lemon cheese cakes Take halfe a pd of Almonds blanched & pounded very small [with?] Rose water, halfe a pd of sugar beaten & sifted, & three quarters of a pd of melted butter being almost cold again, eight yolkes of eggs, & four whites very well beaten, and ye yellow pill of a large Lemon, boyle ye peel till it be very tender, & ye bitterness be out, then beat it very well in a Mortar & mix all [Nye?] together very well, bake it in a good light crust & lay [illegible] [illegible] is
