To Pott Lampreys take e'm & slice em down the back & wash e'm clean season e'm with pepper & salt & Nutmeg & a little salt [Pinnella?], lay e'm in a pot & in the midle put a pilld onion or two wth 2 or 3 Bay leaves, so fill e'm up wth butter, when thay baked which will be in a bout an houre & half poure the butter from e'm & put e'm into single potts & fill e'm up with Clarified butter
