(70) To Preserve Oranges Grate a little of the Outward Rind of your Oranges, and let 'em lye in Water all night then boil them in Soft Water (Shifting the Water two or three times in the boiling) till a Straw may Run through them, then let 'em lye in fair Water till they are cold then Way them, & to every pound of Oranges take two pound of double Refined Sugar, and let it dissolve in a little Water, then boil and Skim it very Well, then cut a little bit out of the Stalk end of your Orange and with a tea Spoon Scoop out all the Soft Seedy part, then put them in your Sugar and let 'em boil a While, take them off -
