(97) A Plumb Cake Work a pound of fresh butter to a Cream with half a Naggin of brandy and put to it a pound of Sifted Sugar, then beat up nine Eggs, and take a pound of fine flour and put in your Eggs by a Spoonfull at a time a long with your flour till they be all in when they are Well Work'd, put in a pound of Clean pickd Currans, then put about half of your Cake in your pan, and have some Citron Candy'd Orange and blanch'd Almonds cut small & put into it, then put in the Rest of your Cake & let it Bake two Hours
