(30) To make oring & Lemon Chips Take the best Sevill oringes & paire them with a penknife in narrow pairings about the bredth of a halfepenny ribin but they must be pretty thick throw them into water as you doe them then take them out of that water & put them into a cleane brasse pan & put to them as much water will cover them close with a Cap paper. & let them boile till they be tender. then take them of the fire & drain them well from the water. then put to them as much Clarified sugar as will cover them. & set them on the fire againe & cover them with a white Cap paper. & let them boile very well till the sugar be well entered in. if you would have them for present use you may boile them to Candy height & finish them out.but if you doe a great quantity for keeping you may lay them in a pot or Tub & give your syrrup a boile & pouer it on them. you may keepe them all the yeare & Candy them as you need them. you must doe them as your other things out of the syrrup. onely you must not wash them as you doe other things but lay them on a seive to drain. Lemon chips is the same way only you must paire them of whole pickled Lemons.
