(74) To preserve barberries Take them & seed them with a pin & if they be for drying tie a great many bunches together upon a little stick & if for preserving let the be in loose bunches weigh them & to every pound take a pound of loafe sugar dipt in water & put it into your pan & let it boile very well & skim it very cleane then put in [your?] barberries. & give them a good boile or 2. then pouer them into a stone dish. & cover them with a paper. & let them stand till the next day. & if they be for preserving take some more fresh berries. & boile them in water. & strain them thru your pulpin seive. & measure a pint of it to a pound of sugar & boile it & skim it cleane. then put in [your?] other syrrup & boile them together then put in your barberries. & give them a good heat & put them into your pots or glasses & keepe them for your use. if for drying they must be taken out of the syrrup after the first boiling. after they have laid one night in it & laid upon glasses & set into your stove to dry & dust them with fine sugar.
