(142) To make a pretty small Mead Take to one quart of honey 6 quarts of water. if you put in any sugar you may put more water. set your water on the fire. & let it boile then put in your honey & when it boiles skim it. & let it boile for about halfe an houre. then put in a rase of ginger sliced & a few cloves & have tied up in a posy. a little sweet bryer a little [borne?] a few bay leaves & [when?] it comes of the fire put it in. then the Juice of 2 Lemons & the skin of one. if you have any syrrup of Lemons you may put it in. & leave out the Juice of the other Lemons. then power it into your stand. when it is a right heat put to it 3 or 4 spoonfulls of ale yest & stir it in so let it stand for 4 daies if you make Cowslip mead you must put your Cowslips into your stand & power it hot of the fire upon them & let them be in all the while that its working with yest. dried Cowslips will doe as well as new gathered this will be ready to drink in a weekes time.
