(151) To make Cherry wine Take 20 pound of Cherries stone them into an earthen pot then put to them 4 pound of sugar. then set the pot into a kettle of water & let it boile very well for a quarter of an houre. strain them into a pan or Cream pot & let it stand to settle 3 or 4 daies then bottle it & put into every bottle a good peice of loafe sugar. & stop the bottles very close. when you have drained the liquor from the cherries you may lay them upon a py plate & so dry them.
