(218) To make very good Cheescakes of Eggs Take a quart of milk & put in a pan. & set it on the fire to boile then have ready 20 Egg yolks bett with a little milk. then strain them thro a haire seive into your pan. & stir it well on the fire. & when it is very thick put it thro a Cloath & let the whey run from it. then beat it in a morter. with a spoonfull of oring flower water & 4 ounces of fine sugar. with halfe a nutmeg & a little Cinamon & a gill of thick Cream. & a pound of Currans washt & dried & a pound of butter melted & if you please may make them this way with Cheese curd instead of Eggs. but then you must put in the yolks of 4 Eggs.
