White Currant Wine Mrs Gatliffe To every Gallon of Water take the juice of two quarts of Currants taking care not to strain them off too near. and three pound of good loaf Sugar mix them with as much water as will fill the Cask - let the Bung remain open untill the middle of September filling the Cask up every day with Water. then bung it close up. it will be fit for use in July following but will improve the longer it is kept. Bottle it at six Months end. To preserve Strawberries whole allow a pound and half of Sugar to two pound of Strawberries - make the Sugar into a Syrup when cold put in your Strawberries give them a gently boil - set them by till next day - then drain them cut and boil the Syrup till it becomes a little rosy. - then put in the Strawberries give them a gently boil and put them in Pots. - For a Cough Two Ounces of Honey two Ditto Conserve of Roses one Ounce of Lucratory Balsam two pennyworth of Oil of Anniseed mixed up with Sour Drops - about two pennyworth will do - take every night when you go
