be blanch'd either by putting a quantity of dry litter over the Bed the beginning of February or by strawing up the Mould to the plants which will begin to shoot at this lime till they are about nine or ten Inches high - when the Shoots are to be cut in the same manner as asparagus - have almost a similar appearance and are to be cook'd and sent to Table in the same way - a Bed well managed will bear more than twenty years. - Mock Turtle Miss Leigh Dress the hair off a Calves head - cut it from the bones into pieces and lay it in Water all night or Milk & water - then put to it a quart of gravy made as rich as possible from 7 or even 8 pounds of the Shoulder of veal with herbs and lean Ham about one third as much Sherry. Season it with [dryan?] Pepper black pepper & Salt and bake it in a cool oven three Hours & a half or four hours or till quite tender when near enough add a little juice
