Cowslip Wine Mrs Napier - To every Gallon of Water put three pound and a quarter of Lump Sugar, boil it three quarters of an hour - add to it the whites of three or four Eggs Scum it well when it is near cold, put to every gallon three quarts of Cowslip peeps, stir some Barm on a slice of white bread toasted, the Juice and peel of three Lemons, to three gallons - let it work three days, then turn it and put some fresh flowers into the Barrel a pint to each gallon - to a ten gallon Cask put a Bottle of Brandy and half an ounce of Isinglass - it shou'd be kept in the Cask one year before it is bottled.
