Peggy Lowes directions for boiling Fish Salmon shou'd be boil'd quick and put in hot water, a jowl of Salmon of 6 pound will take an hour to boil. a thick Turbot shou'd be put in Cold water and first rubbed over with Lemon then only just boil up once, and scalded out by the fire. it shoud remain in the water an hour a Large Fluke the same only twenty minutes is enough - all flat fish the same except Thait and that shoud be put in hot water but not to boil more than once and also Cod and all other Fish. - To boil a Cods Head Rub it over with the Juice of a whole Lemon let it lye some time - Set it over the Fire in Cold Water, and let it boil once - then let it Simmer an hour if a good large Cods Head - It will take half an Hour to just boil and then shoud just Simmer the remaining Hour --
