Memorandum concerning feeding & killing a Pig. - About three Pints of groats are generally sufficient to put into the Blood a little swelted - keep the blood near the fire that day - Chop your herbs but dont put them to the Blood of herbs use Penny Royal a little thyme, savory leek Parsley & beets - put the groats warm to the Blood. and at the same time add salt to your taste. - Take Care when the head is cut off cut it deep to the Cheeks. - rub the Bacon all over first with Sal Petre then well with common Salt and dry them one upon the other upon a stone [illegible] & rubbing them well every third day. - on the fifth rub a little more common Salt on them - if small
