Mince Meat. To 2 lbs of the inside of a sirloin of Beef which has been roasted 4 lbs of beef suet, let each be chopped small and separate 4 lbs currants well charred, 1/2 lb jar Raisins stoned and chopped, and 8 or 10 apples. 4 Nutmegs - Clover and Cinnamon More than a 1/4 of an oz: as much [Mace?], the clover cinnamon, and [Mace?] finely beaten, grate the Nutmegs. Chop the peels of 4 Lemons add the juice, a lb: of sugar little salt, a Bottle of White Wine and a [Pinch?] of Brandy. - I generally make 1/2 this quantity.
