To pickle melons & cucumbers sweet They must be cut 4 or 5 days before they are ripe, Slice them length ways and if too old take out the seeds, Pare off the outer rind very thin Put them in a Pan with white wine Vinegar let them steep 8 days, then boil them in fresh Vinegar till they are tender strain them out and wipe them with a clean cloth after which put into each a clove or two some cinnamon and mace ginger, then put them in your glasses or pots, between each sow a bed of fine powder'd sugar, when the syrup wastes put more sugar, cover close with bladder. from Mrs. Jones Barilth Mrs. Tannen
