Mrs Howell, Clutton To Make Elder Wine to drink cold To every eight gallons of water put four gallons of Elder berries, boil them till they are soft then strain them off into a tub, and to every gallon of liquor add two pounds and a half of Lisbon Sugar; then boil it one hour, when cold put in it barm toast; When it has worked two or three Days, put it into a Vessel, and to every gallon put one pound of Malaga Raisons (or a peck of Damsons to this quantity) When clear bottle it. Mrs Howell, Clutton Gooseberry Wine. Take the gooseberries when very ripe, and bruise them well & put to them as much river water as will make them so thick that a stick will almost stand.
